Tuber Aestivum
Description
Summer Truffles, or Burgandy truffles, are found mostly throughout Europe. They have only been successfully grown in Australia over the last five years.
About
One of the prized European truffle varieties, tuber aestivum, is usually larger than tuber Melanosporum. It is also less pungent and intense in flavour.
Uses
Overheating destroys the flavour and aroma. Use as you would tuber Melanosporum.
Substitute
You cannot beat fresh truffles, but you can achieve a similar flavour profile using a good truffle condiment.
Availability
In Australia, they can be purchased from the Farm Gate or some providores when in season during our Summer, which usually runs from December to March.
