Description
Small oval-shaped tuber slightly bigger than a fingerling. Purple skin with white and purple flesh, often in a tie-die effect.

Origins
South American Native (Purple Congo)
Uses
They can be steamed or boiled and used in salad. They can bleed slightly, colouring a dish, but that can be part of their charm. The deep purple is great for a splash of colour.
I Have Used
I have parboiled it on a pizza with bacon and anchovies or sliced it thinly and added it raw to the pizza base for the potato pizza with salmon. I also used it in a fish en papillote with fingerling potatoes to provide colour.
