Pink Fir Apple

Type

Waxy Fingerling potato of heirloom origins

Description

Pink-skinned with yellow flesh and shaped like a finger. The Pink Fir Apple potato has a nutty taste and is very similar to kipflers but is a bit more robust.

Pink Fir Apple
Origins

The Wageningen Potato Pedigree Database has it listed as originating in Great Britain around 1850. The European cultivated database has it listed as originating in France around the same time. General searches show it as originating in France and being imported to Great Britain in the 1850s.

Uses

You can use the Pink Fir Apple potato just like kipflers. They can be baked, roasted or boiled and make a superb salad potato. The Pink Fir Apple is more robust than a kipfler and also lends itself to being grilled on the barbecue.

I Have Used

I have just used these in the Healthy Potato Salad. They absorbed the dressing extremely well and held their shape. I want to make the same salad with kipflers to see how it compares. I also want to try parboiling these, slicing them and finishing on the barbecue.
