Description

A fingerling potato with large finger-like tubers. These have deep purple skin and a deep purple flesh that maintains its colour when cooking. They have a creamy texture and slightly nutty flavour.

Uses

They can be used in almost any application. They can be roasted, boiled or mashed. Their starchiness lends itself to gnocchi, but I would like to showcase their nuttiness in a soup.

I Have Used

I used these in the roast potato medley to provide another colour. I noticed that when I parboiled with bi-carb, they went blue, but they went back to a deep purple when roasted. I have also used them for their colour as mashed potatoes on the seafood pie, shepherd's pie and meatloaf cupcakes.
