Description

Mid-shaped oval tubers that are reasonably consistent in size. Pale yellow skin and creamy yellow flesh. They are characterised by the purple eye that creates a purple blush on the skin.

Breed in the United Kingdom in 1992.

Uses

You can use the Kestrel salads and stews, fried, baked, boiled and mashed.

I Have Used

I love these steamed and maybe dotted with a bit of butter. They make an excellent potato salad. I have used it as the crispy base of the Korean Pancake and as a roast potato.
